Traditional Moroccan Rfissa Recipe with Our Rfissa Spice Blend
Rfissa is one of the most iconic dishes of Moroccan cuisine. This family and comforting dish is often prepared for special occasions, such as holidays or important visits. This dish combines rich flavors with a unique texture, thanks to its pieces of msemens drenched in fragrant sauce.

Ingredients
For the sauce:

1 kg of free-range chicken
-
2 kg chopped onions
-
1/4 glass of oil
-
1 bunch of parsley
-
1 bunch of coriander
-
3 tablespoons of our Rfissa spice mix
-
2 handfuls of fenugreek seeds
-
100 g green lentils
-
1 clove of garlic
-
1/4 teaspoon of smen
-
Salt, to taste
-
2 liters of water
For the msemens dough:
-
1 bowl of white flour
-
2 bowls of extra-fine semolina
-
1 pinch of salt
-
1 bowl of oil
-
2 bowls of water
Preparation
Step 1: Prepare the seeds

In a large shallow dish, mix the flour, semolina, and salt. Gradually add the water while kneading vigorously until you obtain a smooth and soft dough.

Form small balls, brush them with oil, and flatten them with your fingers to make small rounds. Stack two rounds, then roll them out together until you get a thin and transparent sheet.

Cook each sheet in a lightly oiled pan over medium heat until golden brown on both sides.

Separate the stacked leaves and cut them into small pieces one centimeter wide. Set them aside in the top of a steamer.
Step 2: Prepare the sauce

In the couscoussier pot, place the chicken, chopped onions, oil, parsley, coriander, and the clove of garlic.

Add the fenugreek seeds, green lentils, and the 3 tablespoons of our Rfissa spice mix. Salt to taste.

Sauté everything for a few minutes, then add 2 liters of water. Cover and let cook for about 35 minutes.

At the end of cooking, incorporate the smen to add a traditional touch and an inimitable flavor.
Step 3: Heat the seeds

Place the pieces of msemens in the couscoussier basket and let them warm with the steam from the sauce for about 6 minutes.
Step 4: Dress the dish

In a large deep plate, arrange the warm pieces of msemens.

Place the chicken in the center and generously drizzle with the sauce.

Serve with the remaining sauce in a separate bowl, so that everyone can help themselves as they wish.
